Mashed potatoes hold an esteemed place in our family’s culinary repertoire, eliciting eager requests from my children on an almost daily basis. Despite my best efforts to diversify our vegetable intake, mashed potatoes maintain their reign as the ultimate comfort food, loved by all, including my husband and myself.

In my quest for fresh recipe ideas, I delved into the realms of TikTok and Instagram, hoping to stumble upon a novel twist to breathe new life into this beloved classic. It was during this digital exploration that I chanced upon a captivating suggestion from a user named Jourdyn, better known as @jeauxp: the addition of chicken stock to mashed potatoes. Intrigued by this unexpected ingredient, I felt compelled to embark on a culinary experiment.

Jourdyn’s unconventional method began with a departure from tradition: leaving the potato skins intact. Typically, the skins are discarded, but in this approach, they were meticulously oiled and washed before being introduced to a simmering concoction of chicken stock and water. Entranced by the prospect of a new culinary adventure, I eagerly embraced this unorthodox technique.

As the potatoes simmered, enveloped in a fragrant bath of chicken stock and water, anticipation mounted. Once tender, I carefully mashed them, incorporating generous amounts of butter, reserved broth, and a hint of freshly ground black pepper. The resulting amalgamation was nothing short of sublime: the skins contributed a rustic charm, while the infusion of broth imparted a delicate umami undertone, elevating the dish to new heights of gastronomic delight.
