The Big Reveal: Why Potatoes Turn Green

When you see a potato with green skin or green patches underneath, you’re actually witnessing photosynthesis—the same process that makes leaves green!

The Science Behind the Color

Potatoes are tubers, which means they grow underground where it’s dark. But when they’re exposed to light (either in the store, in your pantry, or even under thin skin), they start producing chlorophyll, the green pigment that helps plants convert sunlight into energy.
Here’s the fascinating part: The green color itself is harmless. Chlorophyll is perfectly safe to eat—it’s what makes spinach and kale so healthy!
BUT (and this is a big but), the presence of chlorophyll is a warning sign that something else is happening.

The Real Concern: Solanine Toxin

When potatoes are exposed to light and start producing chlorophyll, they also produce higher levels of a natural toxin called solanine (and a related compound called chaconine).

What Is Solanine?

Solanine is a glycoalkaloid poison that potatoes naturally produce as a defense mechanism against pests, fungi, and insects. It’s the potato’s way of saying, “Don’t eat me!”
The connection: Light exposure triggers both chlorophyll production (the green color) and solanine production (the toxin). So while the green color itself won’t hurt you, it’s an indicator that solanine levels may have risen to unsafe levels.
